Versatile Red Pepper Cream Sauce

This versatile sauce is great over pasta, grilled chicken and steamed veggies, or even as a dip for a steamed artichoke.
- 1 red pepper, diced
- 1 sweet onion, diced
- 2 cloves roasted garlic1 cup 2 % cottage cheese
- ¼ tsp kosher salt
- Olive Oil Cooking Spray
- In a non-stick skillet and over medium heat, sauté the diced onion and diced red pepper in cooking spray.
- Add the salt.
- When the onion is translucent, let it cool and place in blending machine.
- Add cottage cheese and roasted garlic to the onion mixture and blend until smooth.
