Asian Fried Rice! It’s all the rage right now, and why not? It’s a healthier, low carb alternative to the real thing and still tastes delicious.
1 head cauliflower
2 tsp Coconut Oil or Olive Oil
Optional Ingredients – since I was serving Beef and Snow Peas over this, I did not season it much. If you’ll be adding other ingredients, like other veggies or proteins, you could season it while cooking it!
3 TBSP Braggs Coconut Aminos (soy sauce alternative)
To start, cut up a head of cauliflower and pulse in your food processor, Ninja, blender…etc.. to create a rice-like texture.
Heat the olive oil or coconut oil in a pan or griddle, and add all of the pulsed cauliflower rice. If seasoning it, add your amines or soy sauce and turn over so that all sides brown. If adding an egg, I just fry it over to the side of the cauliflower and constantly stir it until cooked through – then chop it and incorporate it into the rest of the cauliflower mixture. You could also cook the egg in a separate pan, chop it, and mix it in later…but that does dirty another pan! 🙂
